Buen Sabor Wednesday- Vegan Gingerbread Cookies

For several years, growing up, I got together with my ballet buddies to bake a gingerbread house. We’d then raffle it off to benefit our ballet company, Amherst Ballet Theatre Company. It was fun to get together and create this yummy project. I just found a recipe for punked out vegan gingerbread cookies that I thought I’d share with you. They are the perfect treat to make with friends. They are also a great holiday gift. Just be sure to make them with lots of TLC.
The ingredients are:
1/3 cup canola oil
3/4 cup sugar
1/4 cup molasses
1/4 cup plain soymilk
2 cups whole wheat pastry flour or all-purpose flour (or a mix of both)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
spice blend:
1/2 teaspoon each ground nutmeg, cloves and cinnamon
1 1/2 teaspoons ground ginger
