Buen Sabor Wednesday- Peppermint Brownies

OK, so these aren’t exactly Jenny Craig brownies, but it IS New Years and what a great treat to take to a party tomorrow night! This recipe comes to us courtesy of my friend, Amelia Winslow. (You may remember some of her tasty recipes from earlier this year).
Her Peppermint Brownie recipe call for the following ingredients:

1 package Ghiradelli Chocolate Brownie Mix
Eggs — however many it says on the box
Oil — however much it says on the box
Peppermint Schnapps — replace half the water it calls for with Peppermint Schnapps
2 oz mint chocolate chips or chunks, melted (Trader Joe’s has good mint dark chocolate chips)
1/2 cup Candy Canes pieces (smashed into little bits)

I tracked down a recipe for turkey roulade (spiral stuffed turkey breast). This is a great alternative when cooking the entire turkey is just too much work. Not to mention that it looks super fancy. Why not try something different this holiday?

THE INGREDIENTS ARE:

STUFFING
2 teaspoons extra-virgin olive oil
1 cup finely chopped onion
1/2 cup finely chopped celery
2 cloves garlic, minced
1/2 cup fresh whole-wheat breadcrumbs
3 tablespoons chopped fresh parsley
1 tablespoon chopped fresh thyme, or 1 teaspoon dried
1 1/2 teaspoons chopped fresh sage, or 1/2 teaspoon crumbled dried (not ground)
1/4 teaspoon salt, or to taste
Freshly ground pepper, to taste

TURKEY & GRAVY
1 2-pound boneless turkey breast half
1/4 teaspoon salt, or to taste
Freshly ground pepper, to taste
4 teaspoons extra-virgin olive oil, divided
1 cup apple cider
1/2 cup reduced-sodium chicken broth
1 cup onion, coarsely chopped
2 cloves garlic, crushed and peeled
8 sprigs fresh thyme, or 1 teaspoon dried
4 teaspoons cornstarch
2 tablespoons water
1/4 cup reduced-fat sour cream
1 1/2 teaspoons Dijon mustard
1 teaspoon lemon juice

I love that during the holiday season people are focused on giving to others. A holiday gift need not be gift wrapped. Sometimes an unexpected, unusual gift is more appreciated. Here are some ideas for creative ways to gift this holiday season.

Give Time: This holiday season I am giving my time to gift wrap at a local bookshop, where the proceeds will go to a non-profit for troubled teens in Los Angeles. Which organization is of interest to you? Call them up and see if they need any volunteers.

Give Skills: What are you good at? Donate your experience or skills. Consider a skill that you have that would be helpful to a charitable organization, such as web design, writing, fundraising, recruiting, etc.

Give Items: Contact your local shelter, Goodwill, Salvation Army, etc. and see what they need. Your donation of gently worn clothing, household items, wrapped gifts, canned food and more would most likely be greatly appreciated.

Give Money: Find a trustworthy organization to make a monetary contribution to. Contact the organization to ask how donated money is allocated, short term goals and long term goals. Depending on the size of the donation, it could be tax deductible.

Buen Sabor Wednesday- Lechón Asado (Roast Pork)

I realize that this is not exactly light fare, but I had to at least mention lechón asado (roast pork) this holiday season. You see, in Puerto Rico the tradition is to slow-roast a pig, on a spit, for the holidays. (And let me tell you that when you roast a pig for hours and hours, the flavor is unbelievable!) Here is a version of lechón asado that you can make at home, in your oven.

The ingredients are…

For the marinade:

one 3-pound boneless pork loin roast
4 cloves garlic, peeled and minced
1 teaspoon salt
1/2 teaspoon ground, dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground bay leaves
1/2 cup sour orange juice or 6 tablespoons fresh lime juice plus 2 tablespoons fresh orange juice
3 tablespoons dry sherry
1 large onion, thinly sliced
spray olive oil

For the mojo (garlic citrus) sauce:

1/4 cup olive oil
8 cloves garlic, cut crosswise into paper-thin slices
3/4 cup fresh sour orange (or 1/2 cup fresh lime juice and 1/4 cup fresh orange juice)
1/2 cup chicken or vegetable stock or water
3 tablespoons chopped, fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon ground, dried oregano
1/2 teaspoon freshly ground black pepper
salt to taste

On Saturday night I had the joy of attending Stevie Wonder‘s 14th Annual House of Toys Concert at the Nokia Theater at L.A. Live. Watching Stevie Wonder perform live was such a thrill, but I also enjoyed the performances of the guest performers, one of which was the a capella group Mosaic. They were AWESOME! They sang three songs and I only wish that they would have sang more. 🙁

Fabuloso Friday-A Woman’s Wish

Yesterday I learned that one of my fellow SmartyLA (female entrepreneur) gals has been doing a very beautiful and generous thing and is now asking others to support her cause. 8 years ago Bobbi Palmer was in a local dress shop when she saw a young lady admiring her reflection, in the mirror, in a beautiful dress. This young woman put the dress on layaway and left the shop. Realizing that the purchase of this dress might be considered an extravegance by this young lady, Bobbi asked the shop owner what the balance due on the dress was and if she could pay it off. The shop owner agreed and Bobbi paid of the balance due on the dress, anonymously. She asked the shop owner to call the young lady and let her know that someone had anonymously paid the balance off on her dress and would like her to come pick it up, and enjoy it.

Fast forward 8 years, Bobbi continues to pay off layaways for woman whom she (or the shop owner) believe could use a hand in purchasing their dream dress. Her goal is to send a message to less fortunate women that they are valued and beautiful. Bobbi has created a website, called A Woman’s Wish, where she hopes to raise funds to pay off more layaways.

Moved by Bobbi’s actions? You can follow her lead. Here are a few tips that Bobbi give for doing as she has done, over the past 8 years*:

1. Find a store that caters to lower income women and accepts layaway.
The owner should be someone you feel you could trust and who would be a
good partner in this giving process.

2. Go through their layaway book and select the item(s) to pay off. Even
if it’s one item for $15, it will bring a worthy woman great joy!

3. Have the store contact the women to tell them a stranger has bought
their clothes and to come get them. You may choose to be present as they
make calls, or not.

4. Go home feeling amazing because, in a very direct way, you have
impacted the lives of women by helping them feel special and valued.

Christmas is my favorite time of year, especially because of all the yummy treats and traditional recipes that make it fun and festive. Eggnog is the signature comfort drink that’s irresistibly delicious! What are your favorite holiday recipes? Please share them with me by commenting below. Thanks and Happy Holidays!!!

Traditional Eggnog Recipe:
12 egg yolks
5 cloves, whole
4 cups milk
4 cups cream
3 cups light rum
1+ ¾ cups brown sugar (may be substituted with agave)
2+ ½ teaspoons vanilla essence
1 teaspoon cinnamon, ground
¾ teaspoon nutmeg, ground

Going Vegan?

Vegan Eggnog Recipe:

2 10-oz packages silken regular or low-fat tofu
16 oz. vanilla soymilk
2 tablespoons vanilla extract
1/4 cup sugar
2 tablespoon brown sugar ((may be substituted with agave))
1/4 tablespoon ground tumeric
1/2 to 1 cup rum or brandy (for a non-alcoholic version you can use fruit juice)
nutmeg to taste

Terrifico Tuesday – Winter Wonderland

The holidays are fast approaching. Lights, music and holiday cheer abound. Although it has been years since I lived in my hometown of Amherst, Massachusetts it still doesn’t quite feel like the holidays without a little snow. I miss getting all bundled up to make snow angels, go sledding for hours and then come home to Mom’s hot chocolate. The not so fun part about sledding when I was young was that boots just weren’t as waterproof as they are now. That meant that I had to wear bread bags over my socks, with rubber bands on my ankles, so that my feet wouldn’t get wet. And because my feet were frozen when I got home my mother insisted that I place them under cold running water, not hot. (There was some sort of logic to that, but I still can’t quite figure it out). So although I miss the beauty of the snow I can’t say that I miss my bread bag socks or frozen feet.

Buen Sabor Wednesday- Vegan Gingerbread Cookies

For several years, growing up, I got together with my ballet buddies to bake a gingerbread house. We’d then raffle it off to benefit our ballet company, Amherst Ballet Theatre Company. It was fun to get together and create this yummy project. I just found a recipe for punked out vegan gingerbread cookies that I thought I’d share with you. They are the perfect treat to make with friends. They are also a great holiday gift. Just be sure to make them with lots of TLC.

The ingredients are:

1/3 cup canola oil
3/4 cup sugar
1/4 cup molasses
1/4 cup plain soymilk

2 cups whole wheat pastry flour or all-purpose flour (or a mix of both)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

spice blend:
1/2 teaspoon each ground nutmeg, cloves and cinnamon
1 1/2 teaspoons ground ginger
