Buen Sabor Wednesday- Anti-Aging Salad

This salad is not only yummy but may help you stay young, as it contains 3 of the Top 10 Anti-Aging Foods, avocado, arugula and tomatoes. Other Top Anti-Aging Foods include: Acai, Beans, Blueberries, other Dark Leafy Greens, Extra Virgin Olive Oil, Garlic, Sweet Potatoes and Walnuts. Luckily I love and eat all of these foods, regularly. I guess that I will be forever young. 🙂

Enjoy this recipe and your youth!

Ingredients:
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
Salt and freshly ground black pepper
6 ounces arugula leaves
1 avocado, chopped
1 medium tomato, chopped
2 hearts of palm, chopped
1/3 cup pine nuts, toasted
2 tablespoons grated parmesan cheese
