Buen Sabor Wednesday- Breakfast de Campeones!

Aside from my dad’s homemade waffles, covered with fresh strawberry pureé (yes, I eat waffles), my favorite breakfast is huevos rancheros-healthy style. I eat eggs almost every day, but my favorite way is Mexican style. The ingredients are:
1/4 cup salsa (as spicy as you please)
1/4-1/2 avocado, sliced (depending on size)
jalapeño peppers (optional)
corn tortilla (optional)
shredded cheese (optional)
The above ingredients are ones that I usually have on hand. (Living in southern California my pantry better have salsa and avocados, at least). This is the easiest recipe ever! You can either fry the eggs or do as I do and poach them. (I have a great egg poacher that I got at Williams Sonoma years ago, never realizing how much use I would get out of it). So basically all you have to do is heat a little salsa in the microwave. Meanwhile, cook your eggs, (sunny side up or poached). If you have a corn tortilla you can warm it up slightly and lay it on the plate, (otherwise, do as I do and skip to…), place eggs on plate, (on top of tortilla-if used), layer on salsa and top with avocado slices. Voila! That’s it. (If you enjoy jalapeños and cheese, go ahead an sprinkle them on top). It’s super quick, easy and full of protein!
