Buen Sabor Wednesday- Quinoa Vegetable Salad

Quinoa is one of the healthiest foods on the planet, with some of the biggest nutritional bang for caloric buck. Did you know that a half a cup of cooked quinoa has 5 grams of protein, (more than any other grain), plus iron, riboflavin and magnesium. So let’s get cooking with quinoa!

I found the recipe for a Quinoa Vegetable Salad. It’s easy to make and very nutritious. The ingredients are:

4 cups vegetable broth

1 1/2 cups raw whole grain quinoa

1 cucumber, sliced

1 red or yellow bell pepper, diced

1/2 cup lightly steamed broccoli florets

2 tomatoes, chopped

1/4 cup olive oil

1/3 cup lemon juice

2 cloves garlic, minced

dash salt and pepper, to taste (sea salt tastes best)

    Quinoa for breakfast anyone? Prepare according and add some dry fruit of your choice and maybe a hint of honey to sweeten it up. The body loves a nice hot breakfast and I love anythind a little bit sweet…=o)

    I think this would be something to watch with my entire family, especially my 19 year old son who is a cancer survivor. He may change his perspective of his life, let go of the anger and frustration and celebrate and enjoy the opportunities he has today.
